At our home , kheer was a must have sweet on all occasion , be a birthday or any puja . I still remember my mother standing in kitchen , preparing kheer , even before I got out of bed on my Birthdays.
Kheeranand is a solid version of kheer , very simple to make , but u need to be patient for preparing this sweet.Vivek introduced Kheeranand to me ,when I accidentally added more rice to kheer , he told me its another dish . I thought he is saying this to make me feel better (just like him!) , but now I know its true .
Ingredients
whole milk
rice
5:1 ratio works well
(I used 2.5 litres of milk and around 300 gm rice )
sugar (equal to rice )
cardamom-3
raisins , almonds , cashews (optional)
food color (optional)
method:
Clean rice well and soak it in water .
Boil milk (add 1/2 cup water , so that milk does not burn or stick to bottom)
Add drained rice , switch the gas to medium , let the rice cook , keep stirring in between .
When rice is cooked completely, add sugar and cardamom powder and dry fruit .
Keep it on stove on low heat till desired consistency .
(rice absorbs milk as it cools down ).

Garlic (lahsun) chutney
Grind 2 cloves in a food processor .Heat 2tbsp of oil in a pan, put some mustard seeds , when they start spluttering , add garlic paste and 2tbsp of red chili powder(its really hot!), keep the gas on medium heat , remove when the paste starts leaving oil .

sabudana (Sago ) treat
This is the easiest delicacy u can eat when u are fasting or want to have a quick snack .Its not hard to prepare , but somehow needs extra care.
Ingredients :
Sabudana (sago)1 cup (soaked fr 3 hrs ), remove water , pat dry
{don't over soak them , they tend to get mushy}
oil 1-2 tsp
mustard seeds(rai) 1/2 tsp
groundnuts (fried)
green chillies
cilantro(optional)
salt(to taste) kala namak (rock salt)works best (1/4 tsp )
Recipe
heat oil in pan , add mustard seed as they splutter add green chilies.Now add sabudana , cook on low heat for 2 min , sprinkle salt , mix tenderly . You can also add some sugar (1 tsp). Put cilantro on top , squeeze lemon , add groundnuts .
You are ready to serve.
